Ever had the kids go through pears and bananas like they can't get enough... and then the next week they won't touch them? If you have a pear that has gone a bit past it's crispy best and a banana that is getting a bit spotty- grab that half a jar of nut butter at the back of the pantry, any other "topping" fruit you may have (Bananas, berries, figs, nuts, etc) and away you go!
What You Need:
1/2 cup all-natural almond butter, drippy
2 large eggs
1 large ripe banana and 1 large ripe pear (~1 cup mashed)
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 cup milk of choice
2 tablespoons oil of choice
1.5 cups flour of choice
1 teaspoon baking soda
1/8 teaspoon salt
1/2 cup sugar of choice
What To Do:
First, preheat oven to 180ºC and line a muffin tin with muffin liners OR spray with cooking spray. Set aside.
In a medium bowl, whisk together dry ingredients. Set aside.
In a large bowl, whisk together all wet ingredients. Then transfer dry ingredients into the wet ingredients and mix until combined.
Transfer batter into muffin tin, filling each muffin about 2/3 of the way full. Place any desired toppings.
Bake at 180ºC for 16-18 minutes
