Almond Butter Banana Pear Muffins




Have you tried our amazing Nut Butters? If you haven't- check them out- oh so decadent, fresh, and artisan made! This recipe is a delicious 'No Guilt-No Waste' type recipe inspired by the folks at Fit Foodie Finds.


Ever had the kids go through pears and bananas like they can't get enough... and then the next week they won't touch them? If you have a pear that has gone a bit past it's crispy best and a banana that is getting a bit spotty- grab that half a jar of nut butter at the back of the pantry, any other "topping" fruit you may have (Bananas, berries, figs, nuts, etc) and away you go!


What You Need:


  • 1/2 cup all-natural almond butter, drippy

  • 2 large eggs

  • 1 large ripe banana and 1 large ripe pear (~1 cup mashed)

  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon

  • 1/2 cup milk of choice

  • 2 tablespoons oil of choice

  • 1.5 cups flour of choice

  • 1 teaspoon baking soda

  • 1/8 teaspoon salt

  • 1/2 cup sugar of choice


What To Do:

  1. First, preheat oven to 180ºC and line a muffin tin with muffin liners OR spray with cooking spray. Set aside.

  2. In a medium bowl, whisk together dry ingredients. Set aside.

  3. In a large bowl, whisk together all wet ingredients. Then transfer dry ingredients into the wet ingredients and mix until combined.

  4. Transfer batter into muffin tin, filling each muffin about 2/3 of the way full. Place any desired toppings.

  5. Bake at 180ºC for 16-18 minutes
