What is yellow, cinnamon-y, buttery, crunchy, creamy, and disappears at an amazing pace? Our autumn spiced grilled pineapple of course! A super fast, super easy whole foods based dessert you can whip up anytime!
Beyond simple- Slice pineapple, brush with butter, cinnamon (cardamon or nutmeg), a sprinkle of sugar to really caramelise it (if desired) grill at high heat and top with toasted coconut and yoghurt/cream/ice cream of choice! Voila'!
What You Need:
1 Pineapple
2 tbsp butter
1/2 tsp cinnamon (or mixed spices including cardamon and nutmeg)
Optional 1 Tbsp of sugar
1/2- 1 cup shredded coconut (depending on how many you are feeding)
a dollop of yoghurt/cream/icecream of choice
What To Do:
Pre-heat grill or oven grill to high heat.
Remove pineapple skin and cut pineapple into thick slices
Mix spices into melted butter. Brush onto pineapple and sprinkle with sugar (if using) and spices (or you can mix the spices into the butter)
Place onto grill (or into oven) until caramelised to your liking. Flip once to grill the other side. brush with more butter mixture if desired.
Meanwhile toast coconut in a frying pan. Watch carefully to avoid over toasting.
When pineapple is finished grilling, top with toasted Coconut and a dollop of your favourite yoghurt/whipped cream/ice cream.
