With Broccolini gloriously in season (and on special), here is a super simple mid-week crowd pleasing meal. Even better, you can add chilli, additional lemon or even a bit more garlic to suit your tastes.
What You Need:
1/2 cup Olive Oil
1 bunch of broccolini
1 large chicken breast, (or 2 small ones) thinly sliced
3 -4 Tbsp pesto of choice
3 garlic cloves, diced
2 large shallots, diced
Salt and pepper to taste
Lemon wedge and/or parmesan cheese to serve
2 serves pasta of choice
What To Do:
Marinate chicken in 2-3 Tbs pesto for at least an hour prior to cooking.
Prepare pasta as per packet instructions- set aside and keep warm.
Place a glug of the olive oil, in frying pan and add chicken pieces. Cook over medium high heat until cooked through. Remove chicken and set aside.
Add a bit more oil to pan if needed. Add shallots, sautéing for 2 minutes. Add garlic and broccolini to pan, sautéing another 2 minutes, stirring occasionally.
Add chicken, additional pesto and pasta back to pan, mixing gently until warmed through. Serve with a slice of lemon and a sprinkle of parmesan.
