Makes 1 generous serving or 2 smaller servings
This coconut-avocado smoothie is the perfect snack, whether it be a mid-morning, mid-afternoon or a post-workout snack. It is jam packed with goodness – loads of fibre, protein and good fats – to keep you satisfied until your next meal. Bonus: it also tastes creamy and delicious, just what your tastebuds need for a little pick-me-up during the day!
What you need:
½ cup fresh or frozen mango
2 packed cups baby spinach leaves
1 ripe avocado
1 banana (frozen is best)
3/4 cup coconut milk
Juice of half a lime
1 tsp honey
Pinch of sea-salt
Handful of ice cubes
2 scoops vanilla protein powder, optional
Method:
Blend everything together until smooth and creamy.
Add more coconut milk or a little water if you want a more liquid smoothie. Add a little more honey if you prefer a sweeter smoothie. Blend again as required.
