Creamy Raspberry Yogurt Ice-Pops



Kids home for school holidays? Turn a tasty treat into a 2 day activity that the kids can help with! Making your own ice-blocks at home is always a hit! These are a tart blend of creamy, tangy goodness. When the kids help Mae them- it increases the anticipation and fun of eating them the next day.


Helpful tip- for safety- adults may want to make the syrup in advance of the kids getting involved.


What a perfect treat for a summer's day!


What you need:


¼ cup raw sugar

1 vanilla bean, split

3/4 cup water

2 cups frozen raspberries

3 cups low-fat plain yoghurt


Method:


Combine vanilla bean, sugar and water in a small saucepan. Stir over low heat sugar is dissolved.


Bring to the boil without stirring, then quickly reduce heat to a simmer. Simmer for 10 minutes or until the consistency is syrupy.


Remove vanilla bean and cool the mixture.


Blend cooled syrup and raspberries until smooth.


Gently swirl in yogurt with a spoon.


Pour into ice-block moulds. Will make about 12.


Freeze overnight or until firm.
