Curried Chicken Sandwiches



As my kids get older, I am so excited to be able to steer away from the good old ham and cheese toastie and start experimenting with new flavours and fillings. This creamy, curried take on the good ole' chicken salad makes these sandwiches an easy lunch the whole family will love. (makes 4)


What you need:


  • 1 large chicken breast, poached and shredded (recipe above)

  • ½ tsp ground paprika (omit if too spicy)

  • 1 tsp curry powder

  • 1/4 cup whole-egg mayonnaise

  • 1 tbs finely chopped fresh chives

  • 1 tbs finely chopped coriander

  • ½ cup finely shredded red cabbage

  • 1 lemon

  • 1 Granny Smith apple, grated

  • Salt and pepper


Method:


  1. Combine chicken, paprika, curry powder, mayonnaise, chives, coriander and juice of half of the lemon in a bowl. Season to taste.

  2. Combine apple, cabbage, carrot, oil and juice of other half of the lemon in another bowl. Season to taste.

  3. Assemble the sandwiches by topping with chicken mixture then with slaw mixture.

  4. Enjoy now or pack for later!
