Who doesn’t love a serve of hot fresh garlicky prawns? Now you don’t have to wait until you go out to a Tapas restaurant! You can have them in the comfort of your own home.
A sure fire crowd pleaser, if you have a few friends coming by try serving up a mezze extravaganza with these prawns, roasted capsicum, hummus, some frittatas and maybe our goats cheese and strawberry salad! What a feast!
What you need:
1 cup olive oil
10 cloves garlic, peeled and finely chopped
Salt and pepper to season
24 medium green prawns (about 1 kg)
2/3 cup white wine
Juice of 1 lemon
1/3 cup chopped fresh parsley
Method:
Combine the olive oil, garlic, salt and pepper in a medium bowl.
Peel and devein the prawns, leaving the tails intact, and add to the garlic and oil mixture.
Stir well to coat the prawns. Cover and refrigerate overnight. This ensures that they will absorb all the pungent flavour.
The next day, preheat the oven to 200 degrees C (fan forced). Arrange the prawns in a single layer in an ovenproof dish.
Add the white wine and lemon juice to the marinade and whisk well to combine. Pour the mixture over the prawns and season more if required.
Cover the baking dish foil and bake in the preheated oven for 8-10 minutes, or until the prawns are cooked.
Sprinkle with fresh parsley and serve with fresh, crusty bread to soak up all the garlicky, oily goodness.
