Hot day and looking for a cold, unique, refreshing yet healthy drink?
I am a big fan of tea. When it is sweltering outside during summer, somehow a traditional cup of tea doesn’t hold quite the same appeal. Bring out the iced tea!
This iced tea is the perfect way to enjoy the best of summer's fruit. Grilling the peaches adds an irresistible toasty depth of flavour I love using Earl Grey but feel free to use whatever variety suits your fancy.
What you need:
2 tbs Earl Grey tea (or 3 tea bags)
4 tbs honey
1 cinnamon stick
2 peaches, quartered, stones removed*
½ cup lemon juice
Handful of mint leaves
Ice cubes
*feel free to use nectarines too
Method:
Add tea to 1 L of boiled water and infuse for 5 minutes. Strain and stir through honey. Add cinnamon stick and allow to cool in the fridge for a couple of hours.
Meanwhile, heat a non-stick grill pan to high heat. Grill the peach, flesh down, until grill marks appear. Remove from heat and cool.
Once the tea is cooled, stir through the peaches, lemon juice, mint leaves and ice. Serve.
