Healthier Chocolate Truffles


We are sure that no one needs an excuse to eat more chocolate, but we are going to give you one anyway! These little balls of joy are chocolatey and decadent, but are fleshed out with avocado. This makes them the healthier option over traditional chocolate truffles. How is that for justification? Try not to eat them all at once!


What you need:


  • 1 cup dark cooking chocolate, melted

  • Flesh of 1 medium avocado, mashed

  • 1 tsp vanilla extract

  • 1/4 tsp Kosher salt

  • 1/4 c. cocoa powder


Method:


  1. Melt the chocolate over a double boiler. Set aside to cool slightly for 10 minutes.

  2. Add the avocado, vanilla and salt to the melted chocolate. Stir until smooth and fully combined.

  3. Place in the fridge for 20 minutes.

  4. Once the chocolate mixture has stiffed slightly, remove from the fridge. Scoop approximately 1 tablespoon into your hand and shape into a ball. Dust with cocoa powder. Repeat until you’ve used all the chocolate mixture.

  5. Pop the truffles back into the fridge to re-stiffen for approximately 10 minutes.

  6. Serve and enjoy!

  7. (Note: these will keep well in the fridge for a day or two. If they have been in the fridge for a while, let them sit at room temperature for 5 minutes before serving.)
