Kathy’s Famous Fruit Crumble

Here is some great Trash to Treasure recipe inspiration! Those apples or pears might be past that ‘perfect’ stage at which the kids like them, or maybe they have a funny spot. Fear not, they still have love to give! Don’t throw those apples in the bin. Make my Famous Trash to Treasure Crumble! Saving great food from the trash, cooking with whole foods, made from scratch, sweet but not tooo sweet and just perfect for finishing off a meal- I love it!


What you Need:

Crumble Topping

•100g rolled oats

•100g butter, softened

•100g brown sugar

•Pinch of salt

•Sprinkle of Cinnamon

•1 tbs zest of the lemon from below

Crumble Filling

•8-10 apples or pears*

•Juice of 1 orange

•Juice of 1 lemon

•2 tbs brown sugar

*you can substitute any fruit you prefer here, but you may have to adjust the sugar measurement to cater for tartness

Method:

  1. Cube all of the fruit roughly.  I leave the skin on, but this is your choice.

  2. Mix the fruit with the rest of the crumble filling ingredients in a bowl and transfer to a oven-safe rectangular dish.  Arrange into a flat layer and bake in a 160 degree C oven (fan forced) for 20-30 min or until the fruit is just tender (test with a fork).

  3. Meanwhile, put all the crumble topping ingredients into a bowl and massage with your fingertips until the mixture resembles coarse crumbs.

  4. Once the fruit is ready, remove from the oven and sprinkle over the crumble topping mixture

  5. Return to the oven for a further 10-15 minutes or until the crumble topping is golden. 

  6. Serve immediately straight up, Greek yogurt or a naughty scoop of ice cream!
