You may have seen our earlier recipe for the World's Best Pico De Gallo+. Here is your chance to put it through it's paces. Even better- you can get absolutely everything in this recipe through Minifarms!
What you need
Enough whole Cos lettuce leaves (or similar style lettuce leaf) to feed your crew
500g David's Larder or Hungerford Meat Co chicken breast or mince
1 packet of Wholefoods and Spice Mexican seasoning
1 batch of our World's Best Pico De Gallo
1 avocado cut into thin slices
Beerenberg Garlic or Chipotle Sauce
Garnish:
Fresh coriander leaves
Lime slices,
Jalapeños if desired
Method:
Prepare the chicken or mince and Mexican Spice mixture as per instructions on packet. Chicken can be poached first if desired.
Prepare Pico De Gallo as per recipe. This can be completed a day or two in advance.
Prepare avocado in thin slices
Wash, prepare and place on serving platter- lettuce leaves/cups and garnish.
Let your crew assemble and enjoy their Mexican San Choi Bao however they please!
