Throw a few cocktail potatoes in the roasting pan and you have a feast.
What you need:
Fish-of-choice
Cocktail potatoes
Thinly sliced Lemon
Oil of Choice
Salt and pepper to taste.
What to Do:
Prepare baking sheet or roasting tray with nonstick paper or oil.
Preheat oven to 220C.
Sprinkle fish generously with spice mix. Set aside.
Par-boil cocktail potatoes for a few minutes or microwave (before cooking- poke with a fork to let out the steam while cooking) for 1 minute each side- flipping them over between. This partially cooks the potatoes to even out the baking time with the fish.
Place half of the lemon slices on the roasting tray bottom. Slice potatoes in half if desired and place in roasting tray with fish. Pour a small amount of oil-of-choice over the fish and potatoes. Sprinkle with salt and pepper to taste.
Place thinly sliced lemon on the top of fish.
Bake at 220C for 12-15 minutes or until fish and potatoes are done to your liking.
Serve with salad
