Very Versatile Poached Chicken




This is a basic poached chicken recipe that you can use over and over again. You can change the herbs and spices that you put into the poaching liquid, to mix it up. I guarantee the juiciest poached chicken that you can use in salads, sandwiches or anything else you choose.


What you need:


  • 4 cups of water

  • 4 cloves of garlic, smashed

  • 1 slice of lemon

  • 1 sprig of rosemary

  • 1 bay leaf

  • (Note: you can use whatever herbs and spices you like, or even just water. Just do not add salt as this will affect the cooking temperature of the chicken. Salt should be added once the chicken is poached).

  • 1 large chicken breast


Method:


  1. Pour the water into a saucepan and add all the herbs and spices if using. Bring the water to a boil.

  2. Add the chicken breast to the saucepan, cover, and switch off the heat.

  3. Leave the chicken for a minimum of 20 minutes in the saucepan, but up to an hour.

  4. Once done, remove the chicken from the poaching liquid and shred. Season as required and use, or store for later.
