Fresh, loaded with veggies, crazy delicious, and actually get's better if you make it the day before! OMG right! If you've not heard of Pico de Gallo before- don't worry- you have probably eaten it at some point as part of a brunch at a cafe or on a fancy burger out with friends. In other words- this feels super luxurious- but is super simple to make! Impress your family, friends, and and maybe even people you don't know!
Why Pico de Gallo+ I hear you ask? Not only is this recipe essential for ALL types of tacos, amazing served with an omelette, stunning eaten simply with corn chips, and lush as a topping on a burger.... BUT....it is the foundation for a gorgeous guacamole! Don't you love two-for-one recipes! Smash up a bit of avo, put in several tablespoons of your Pico, add a splash more lime and salt to taste! Done! How impressive will your made-at-home brunch look served with with both Pico and Guac? People will think you are a magician in the kitchen (which of course, you are.)

Keeps in the fridge for a couple of days and is best made several hours, up to a day, before use....although... awesome even the moment you make it.

What you need
2 cups ripe diced tomatos
1 cup diced mango
1 cup diced onion (any will do- but red looks pretty)
1 Jalapeño (if not in season- any chilli will do) or amount of chilli to taste.
4-6 garlic cloves diced or smashed
A nice handful of finely diced coriander stems** and another handful of coriander leaves to mix in before serving.
juice of 1-2 limes
Salt to taste. However, salt is a key component so I recommend at least 1-2 tsp. Start with a bit less and adjust to your liking.
**Make sure to wash your coriander stems really well to get out the grains of sand.
Method
Dice everything and mix together. Adjust seasoning and amounts to your preferences. Garnish with fresh coriander.
To make Gorgeous Guacamole - smash up your avocados, add several Tbsp (or more) of your Pico. Add juice of at least 1/2-1 lime, a bit more salt, and I highly recommend adding a bit of Chefs Choice garlic powder- as it mixes in really fast for maximum flavour before serving.
I went with measurements as the size of tomatoes and mangos vary. This is a very forgiving recipe- like more mango- go for it, like more tang- add more lime, like more zip- add more chilli etc. Enjoy all the food adventures you can make with just one dip!
