Zippy Curry Baked Cauliflower Bites

Want a dish that seems really decadent, that is loaded with flavour, that is light on the waist line? These super tasty Curry Baked Cauliflower Florets are just the thing. If your crew are cheering on our Olympians, serve these golden babies up with the spicy dipping sauce and you'll have a crowd favourite on your hands.



What you need


  • 3 Tbsp Tahini

  • 2-3 Tbsp water to thin

  • 1 Tbsp Curry Paste

  • 1 tsp Sriracha

  • 2 Tbsp agave or maple syrup

  • Pinch of salt

  • 1 head cauliflower**

  • 1 cup breadcrumbs

Dipping Sauce

  • 4 Tbsp mayo

  • 2 tsp sriracha


Method

  1. Cut the cauliflower in florets

  2. Combine with the sauce ingredients

  3. Coat florets in sauce and dip in bread crumbs

  4. Bake at 180C for 25-35 minutes

  5. Whisk up the dipping sauce ingredients

Enjoy!


**Note- this recipe actually works best with a cauliflower that is starting to get a little past its prime in the fridge. If you have a lovely fresh cauliflower that has loads of water content- to keep your bites more crispy- it can help to sprinkle them in salt and let them sit on paper towering for an hour to drain some of the water (like you do for an eggplant). If you don't have time or the inclination to do this- you can still make this recipe- your bites will be a bit softer in texture, and still delicious.
